CN hosts cultural sunchoke harvest
TAHLEQUAH – On Jan. 14, Cherokee Nation Environmental and CN Public Health staff members worked with CN citizens to harvest, cook and dine on sunchokes, which are also known as Jerusalem artichokes, from the Cherokee Heirloom Garden and Native Plant Site.
Sunchokes are a species of sunflower native to the eastern United States. Prior to European contact, Cherokee people used this flower’s seeds and tubers as a food source. The tuber root has the flavor and texture of a potato or water chestnut when cooked.
